Fruit Syrup is the flavor half of our gummy method. It is a natural-flavor beverage syrup, the kind used for sodas and lemonades, sold by the 750 ml bottle. It gives a gummy its fruit taste and color; the tapioca syrup gives the body and the agar gives the set. A syrup on its own never sets, so this is one ingredient, not a finished mix.

What it is. A sweetened flavor syrup, ready to pour. We rotate through a short list of flavors: passion fruit, lavender, lime and a few others as they come in. If you have a preference, write it in the order notes at checkout and we will match it if we have it, or send the closest thing.
 
How to use it. For a batch of gummies, combine fruit syrup and tapioca syrup to taste, most people run about 1 part fruit syrup to 2 parts tapioca syrup. Measure the total liquid, whisk in about 1 teaspoon (2 g) of agar agar powder per 1 cup (240 ml), and bring it to a full boil for 2 minutes, stirring the whole time. Take it off the heat, stir in your extract and a pinch of citric acid for tartness, pour into silicone square molds, and let it set at room temperature for 30 to 60 minutes. Outside the gummy kitchen it works as a soda, lemonade or tea syrup.

Common questions
Can I make gummies with just this syrup? No. It has no setting agent. You need agar agar to set it, and tapioca syrup to give it a chewy body instead of a thin jelly.
