Tapioca Syrup is the sugar base we use for our own gummies. It is an organic, corn-syrup substitute made from tapioca, sold by the 23 oz bottle. On its own it is just a clear, mild syrup. Paired with agar it becomes a gummy: the syrup gives the body and sweetness, the agar does the setting. A syrup never sets on its own, so plan on both.

What it is. A glucose syrup made from tapioca instead of corn. It is less sweet than table sugar, resists crystallizing, and keeps gummies soft and clear. It does the same job as corn syrup in any recipe that calls for it.
How to use it. For gummies, measure your liquid first: tapioca syrup plus any fruit syrup or water. Whisk in about 1 teaspoon (2 g) of agar agar powder per 1 cup (240 ml) of that liquid while it is still cold. Bring it to a full boil and hold the boil for 2 minutes, stirring, so the agar dissolves completely. Take it off the heat, stir in your extract and a pinch of citric acid if you want tartness, then pour into silicone molds. It sets at room temperature in about 30 to 60 minutes. For baking or ice cream, swap it 1:1 for corn syrup.
Ingredients. Organic tapioca syrup. No corn, gluten, dairy or animal products. 23 oz (652 g) bottle. Store sealed at room temperature.
Common questions
- Will the syrup set by itself if I heat it and pour it? No. It stays a syrup. You need a setting agent, and for a vegan set that is agar agar, sold separately or in our Home Gummy Kit.
- How many gummies does one bottle make? Roughly 2.5 cups of syrup, which with agar fills around 250 small square mold cavities. Most people get three or four batches from a bottle.
